Winston Hugh is the Site Manager for Chartwells at St John’s College in Sydney University, NSW. It’s been a fruitful two years for Winston in his role at Compass Group and prior to that, he worked as a chef for 15 years.
“Most notably Chef de Cuisine at the International Convention Centre, Head Chef of Events at the Intercontinental Hotel Sydney, and Sous Chef of Events at the SCG and Allianz Stadiums,” shares Winston. “Sometimes you’ll catch me in my chef whites if asked by Chef George or Leo, but they’re the only two I’ll put them back on for.”
Having worked for many large hospitality organisations over the years throughout his career across the world, Winston says Compass Group holds a special place in his heart.
“We strive to take care of our team members and are truly genuine in doing so. Those in leadership positions are empowered with abilities to follow through and ensure we are indeed a people focused company. This is uniquely Compass and the first time I have seen this culture successfully launched on such a large scale.”
As for his long-term goal within the company? Winston jokes he wants Regional Managing Director for Asia Pacific Mark van Dyck’s job – even if it means cutting his hair and shaving his beard.
“I remember in the beginning thinking I would be a head chef. Then one day I was, which forced me to ask the question ‘what next?’ Now after two years as a site manager, soon to be three, I find myself asking ‘what next?’ again. Who knows, but I’m confident I’m with the right company. That is, to say, a company that promotes and develops internally based on performance and drive, so at times I feel like the sky is the limit.”
In his time leading the team in our education sector, Winston has seen first hand the passion that employees have for their work.
“I have been fortunate enough to be involved in multiple humble gourmets at our Sydney office as well as help with the mobilisation of our Hotel Quarantine Program here in Sydney during COVID-19,” he shares. “The one main detail that seems to be our common denominator across all sectors and teams is that everyone is here because they are passionate about their roles.”
Any advice for those looking to join Compass Group?
“Ask yourself, are you passionate about any of the wonderful fields that the hospitality industry has to offer? If so, see if there is a role that’s right for you. Who knows this could be the first step on a journey similar to mine, but you won’t know until you take it. You don’t have to see the staircase, just take the first step.”
