We currently have a vacancy for a qualified Full Time Sous Chef to join our team based at Randwick Barracks.  You’ll play a pivotal role in providing a varied, healthy & delicious menu to Defence Personnel. Health and well-being is paramount whilst at the same time providing a level of exceptional customer service. This position is suited for candidates that like to work in a fasted paced supportive team environment.

As such we require an individual with the following;

  • Qualified Chef – Certificate III or above in Commercial Cookery
  • Previous experience at Sous Chef of Senior Chef level is ideal
  • Previous experience in a quality bulk cooking
  • HACCP Food handling experience
  • Attention to detail, strong organisational and communication skills, exceptional food presentation and great time management is a must
  • Ability to work under pressure while maintaining a positive outlook and professional manner
  • Team player and able to work autonomously and flexible approach and attitude
  • High level of customer service, generate ideas on how to be flexible to meet the needs of the business

Key responsibilities of the position include:
• Assisting the Executive Chef in managing kitchen and food production
• Coach others in their job skills
• Take responsibility for ordering and stock control
• Follow company policies and procedure
• Flexible toward duty roster
• Preparing buffet style bulk cooking for Breakfast and Lunch or Dinner and Desserts
• Develop and update industry knowledge
• You will offer guidance and support to the kitchen team where needed
• Ensure all OH&S compliance is achieved
• Working on your own, unsupervised or within a team of other Chefs depending on the size of the kitchen
• Ensuring all catering controls are in place and wastage is kept to the minimum
• Provide exceptional customer service when interacting with our customers and/or client
