Reigning QLD Star Awards Head Chef of the Year and all-round legend, Sam Green has had success after success at Compass Group Australia and lent her hand to many of our sectors. Innovative and passionate, Sam is both a great leader and a great chef.
Joining our Remote Casual Pool in 2017, Sam learnt how different sites worked and got to build on her bulk cookery skills for hungry FIFO workers. “The remote pool allowed me to grow and adapt with the industry and the different sectors all offer unique opportunities which I embraced,” shares Sam.
After transitioning from ESS Defence to ESS Remote, Sam’s hard work and talent was recognised and when the opportunity arose, Sam applied and was promoted to Chef Supervisor. Progressing in her career, Sam’s current role is leading the kitchen as Head Chef at Flight Centre’s HQ in Brisbane.
“The role is forever growing and changing and keeps things interesting with no day the same,” shares Sam. “My favourite thing is hosting functions – we host anything from engagement parties and sit down dinners, to five-course meals and two-day workshops. The opportunities are endless and that’s what’s exciting! ”
But it’s not just functions that gets Sam excited. Her passion for sustainability and zero-waste cooking saw her awarded Restaurant Associates first ‘Planet Positive Pioneer’, for her work in the planet positive space.
“By being planet positive, we can improve the quality of our lives, protect our ecosystems and preserve natural resources for future generations,” she shares. “Throughout my time at Compass Group, I have learnt what I can do to reduce food waste on site and at home and I’ve been able to workshop and develop my skills, ask questions, get creative and give it a go. There’s no harm in experimenting.”

Another passion for Sam and something she hopes to explore more at Compass Group is Women in Food. “I see so many incredible female culinarians in our industry and I struggle with the statistics that sit alongside those. Compass Group has given me the connections and confidence to champion and lead our very own Women in Food initiative here in Australia so stay tuned for some exciting things to come! ”
