Zero Waste Cooking Class – Whole Baked Cauliflower

In Australia the annual food waste bill is estimated at $20 Billion. Government studies show 289 kilos of food per person, per year, go to waste. And based on these figures, Australia is the world’s 4th highest food waste country per capita. Executive Chef Leo Gstrein shares his passion for zero waste cooking, while demonstrating how easy it can be to cook at home.

Compass Group has a global commitment to the reduction and elimination of food waste. As the market leader in food and support services both globally and here in Australia, we have a huge responsibility to drive positive change. Through menu engineering, tracking systems and charitable partnerships with organisations such as OzHarvest, we are proudly making changes in the volumes of food that go to landfill.

Across our portfolio, all our Chefs are passionate about eliminating food waste. In the video below, Executive Chef Leo shows you how to cook one of his favourite zero waste recipes. The humble cauliflower, whole baked, stalks and all, with no food going to waste.
